After studying Proffessional Cookery at GMIT & Advanced Pastry at DIT I spent many years in the Hospitality industry both at  home and abroad in Switzerland, France & USA. Working in many five star establishments in various capacities, Chef de Partie, Chef Patisserie, Sous Chef.
I commenced teaching with Northern Ireland Hotel and Catering College, going on to teach with CERT, FAS & Failte Ireland before joining Shannon College of Hotel Management.
